Sustainability is continuously influencing food innovation, and our chefs are at the forefront of this rapidly changing landscape.

Polish Chef Daniel Szarolkiewicz was a finalist at Sodexo’s first Sustainable Chef Challenge last December in Germany. This competition was part of Sodexo’s ongoing actions to raise awareness on sustainable eating through the use of a broader variety of plant-based ingredients to create tasteful recipes in order to positively influence people’s health and reduce the impact on the environment.

In addition to flavour and originality, judges awarded the contestants for creativity in "upcycling": the use of ingredients that would otherwise be thrown away.
